Abstract
Can white bread, that all-American sandwich staple, be whole-grain bread? Until recently, that question would have been ridiculous. Made from processed flour, some white breads barely contain any dietary fiber, much less whole grains. But after eight years of research and millions of dollars, ConAgra Foods has succeeded in creating a sort of Frankenstein bread: white bread with whole grains.
